Here’s a riddle…

What do ten pounds of potatoes, matzoh meal, eggs and oil make?

Yes, you guessed it! Latkes, or potato pancakes. A traditional delicacy this time of year. Jews prepare them as part of the Chanukah fare. They are fried in oil, representing the oil that was discovered after the destruction of the first Temple. They are commonly eaten with apple sauce. I combine apple sauce and pineapple chunks for a tasty topping.

Well, I made latkes for the Jewish seniors in my community who will join together at our synagogue to celebrate Chanukah. I love this contribution to my community.
